Need help to add status to the screen and edit the status. All these were working earlier but all of a sudden stopped working from this afternoon.

Okay, thanks for asking a new question here instead.
The Status field is a protected field. You are not able to add it to a screen during Create or Edit Operations, or your Workflow Transitions. It will not be visible, as noted by the Where is my field dialog you so kindly took a screenshot of.
The value of this field is set automatically. It is never present on any editable form.
The only way to change a Status is to Transition the issue. These are present in buttons like so –

You cannot change Status's in any other way unless you customize JIRA in some fashion!
Apply an appropriate workflow with the statuses you want and the transitions connecting these statuses. You can then action issues from one status to another, using the aforementioned transitions. If you have a large amount of issues, you can Bulk Transition the issues.

Is there any way to be able to automatically transition a ticket to a certain status on creation?
That is, some should be "Backlog" and some should be "Ready for Development", on creation. But there's no way for us to do this, instead "Backlog" is the default and we are forced to find the ticket in the backlog view and transition it. This is redundant.
Any idea how to solve this?

Status is not a field. It cannot be edited. To change the status, you move the issue through the workflow using transitions. Even the "where's my field" helper is telling you that.
You say that you had it working earlier. That suggests that you had another custom field for status, rather than the actual issue status. As you can not, and never could, edit the status directly.
