×Currently, my teams estimate their stories by hours/mins and then log their hours/min spent on each story. I am looking for a reporting that will show what they estimated vs. what they completed. As well as showing any added/removed stories to the sprint.
I am also looking for a report that will show how much time we've spent on a partner. We have a field in Jira where they have to fill in the "partner" field. Does anyone have any suggestions on a report that will show this? Right now were having to export the data to excel and add the time up to get the amount of time spent.

If your team is currently considering plug-in testing, Performance Objectives app could potentially provide a useful solution for addressing your reporting requirements. Please be aware that I am a member of the team that created the application. It offers a wide range of custom metrics and customization capabilities, adding value to the standard Jira metrics.
To illustrate, let me share a sample configuration from our demo project. Our Multi-metric combined gadget enables you to incorporate several metrics within a single chart. In this example, we've combined "Original Estimate" (h), "Σ Time Spent" (h), and "Number of Issues". You can choose to display them by 'Sprint' with one of the following options:

Time tracking report and Sprint report can give you this information but if you want to build a customised report then you will either have to do this outside Jira or use an app like eazyBI. If you have a custom field on issues then it can also be imported in eazyBI.
