In order to create tables try this way it will help you
|| heading1 || heading2 || and press enter.
You will get the table created. Do follow the same when you want to create table

By default Jira ships with Simple Text Only, If you are looking at Rich Text Editor where you can have tables, pls have a look at jeditor plugin for jira.
