What happens if encoding doesn't match?

This question is in reference to Atlassian Documentation: Connecting JIRA applications to Oracle

There's recommendation:

Ensure your database is configured to use the same character encoding as JIRA. The recommended encoding is AL32UTF8 (the Oracle equivalent of Unicode UTF-8).

What happens, if the recommendation isn't fulfilled? Or, what could happen?

It is not recommended to not be in the Atlassian supported platforms.

Other then getting gibberish letters after inserting a foreign language i have not encountered any problems and/or errors with a different encoding.

Yes. I'm asking about practical impacts. So far we've found only one character not to be working.

However, our customer has got nice database ecosystem using other encoding (backups, monitoring, integrations, etc... ). All their applications use a single encoding, which is not UTF-8.
