We have 8 where I work, it is the "hit by a bus" concept. What if I am hit by a bus on the way to work, someone has to be a backup. As long as they don't mess up my instance. That's why we generally say "at least 2" irrespective of the size of the install. How ever many you have though, you must make sure they work closely together. "Too many cooks spoil the broth" is exactly right.

You can have as many as you like, although the recommendation is between 2 and 10 depending on the size of your installation.
Just add the new ones to the administrators group.
