Hey there! 

I just stumbled across your question. Unfortunately, it is not possible to assign a color to labels in Jira by default. But you can use an app for this. I'm part of a team that offers the Awesome Custom Fields app in the Marketplace, and there are certainly other apps that cover this use case.
