Hi,

is it possible to extend a given custom field (Select List) to have a Select List where the user can give additional values.

What you meant by additional values ? Is cascading select customfield what you need ?

I mean select a value from the given list or provide his own value by typing it.

Can you use Labels customfield ? it provides similar functionality .
