I created 2 workflows: one for story and another for epic.
Unfortunately in my context, I use the same initial status.
Therefore in some boards, there is a confusion because I collect issues from both types.
I tried to update the status of the epic, but I realized that it also updated the status of the story.
How can I do to modify one without updating the other?

You need to create a new status in Jira, after that you need to add this new status in one of these two current workflows and make a transition between the old status and the new one.
After that, you need to change all the issues in the current shared status to the new one, you can do this using a bulk change, and after that, you can delete the shared status on this workflows.
After that, you will have two different workflows with two different initial status.

Correct me if I'm wrong: you'd like to change the status name in the Epic workflow but not in the Story one, so you're trying to do so from the workflow editor:
It is the expected behavior. A status is a global attribute, which means it is shared with all projects, all workflows etc.
If you need to change this status in only one workflow, you'll have to:

you can create new statuses. As soon as thy are available, they can be added to the workflow.
