I'm wondering if it's feasible to configure the "Sprint report" gadget to utilize the Sum of Original Estimates (the total of sub-task original estimates) instead of the Original Estimate value.

With Agile Reports and Gadgets app, you can select what type of tasks you want to count, when using Time Tracking fields:
The Velocity chart can say you about given sprint more then only scope change and completed metrics:

Unfortunately this is not possible with the Jira's Sprint reports or its gadgets.
But a good solution for you would be the Sprint Burndown Burnup Chart gadget offered by our Great Gadgets app, which has an option to include the sub-tasks in the calculation. So it can display the sprint burndown/burnup by Original Estimate by counting all the issues from the sprint (tasks, stories and sub-tasks).
In addition, is displays a Data tab with a detailed sprint report, which displays also the sub-tasks and their estimate.
