So are we using Jira Core, Jira Software and Jira Service Desk - all of these products at the same time? Also, are we using Cloud or Server?
The version numbers you are seeing imply this is a Cloud system. Cloud will also have a base url that is <something>.atlassian.net
It is normal, and recommended (if you need both) to use Software and Service Desk on top of the same Jira Core platform.

Actually this is not an Atlassian Server product page. This is Atlassian Cloud. Sites that are on domains such as atlassian.net OR the legacy jira.com are all Atlassian hosted products. These products run slightly different code than JIRA Server does. You can also tell this is Atlassian Cloud, by looking at your version numbers. Seeing the Service Desk 3.3.0-OD.xxxx indicates that this version is an 'OnDemand' version, this is a past name for Atlassian Cloud products
As for which Jira products you are using in your Atlassian Cloud site, such as Jira Software, Jira Service Desk, etc, we can't really tell if you are licensing any users on your site for those products. But since you see the Boards menu in the top blue navigation bar, this indicates that you are using Jira Software at least.
