We will use the "creating issues and comments from email" feature. The reporter of the issue is matching with an existing user account. I want to search this issues and saved as a filter.
Im not sure you can do that with default mail handlers... JEMH can label issues created by email, allowing a simple enough search filter, of course, getting a commerical addon for just that may not be viable.

Maybe we will use JEMH because we need also the feature to send emails to "no-jira-users".
At the moment we have to use a workaround like a special issuetype and workflow with a create post-function to assign the issue to a special user like "import email" to search for these issues.

There's no way to do this - the method by which an issue was created is not logged
Import, UI, REST, email, jelly, there's lots of ways of calling "create", but they all go through the same "create" code, which doesn't care where it is called from.
Unless you can stick some form of identifier in the email body, you're not really going to be able to do this.
