Are you looking to pickup inbound mail to jira or looking to send mail to office365?   Or both?

For Office365, jira needs a user email account configured with an E1 license.

For sending mail to office365, you need to point jira to your Office365 MX mail record.   Then, in Office365, set your jira server ip as a partner mail server utilizing it's ip address.
