"Email From" Not Working on JIRA Emails

We would like our emails to say who they are from, but even though it is configured to do so the emails just come from our jira alias & therefore don't show who they are from. Under the configuration, it's configured as: ${fullname} (JIRA) so it seems like it should work. We use Microsoft Outlook and although we've always had it configured to show the full name, it never has. I'm wondering if Outlook might be overriding this when emails come in and having them come from the jira alias, or if there is just something i'm missing within JIRA, and wondered if anyone had any experience with this.
