I can confirm the best way to get the sprint start date will be off of an issue.

If you are using Jira Cloud, we have an example of how to do this here that you can reference.

If you are using Jira Server/ Data centre, then you can use the HAPI APIs to achieve this and we have an example here that you can use for reference.
