what is POP and IMAP

They are standard email mailbox protocols.  Think of them as the landing place for emails (like the doormat, mail cage or cat behind your letterbox - when mail arrives at your house, you go there to pick it up)

This is an oversimplification, of course, because they both do a lot more, but that's the basic principle.
