Setting approver (Jira Service Desk)

Hi - using scriptrunner; how would I go about setting the approvers field to a defined value based on the organization of the requestor ?

Some simple guidance be great - not a Scriptrunner / Jira export, but really do need to get understand how to prove this can be done.

Is "Organization" a custom field on the issue?

Its a Jira Service Desk dwfined field.  Customers are associated with an organization.
