The Xray plugin introduces four new issue types to JIRA, all of them having a field 'Assignee', but it's unclear to me who the assignee of a Test, Test Set, Pre-Condition or Test Execution shall be. None of these issues are tasks that can be assigned to and completed by somebody. This also raises the question of how to open, put into progress, close, resolve Xray issues...
Only the Test Execution is somewhat a task, but often the work defined by a Test Execution is shared among several testers, each executing some of the Tests in a Test Execution.
Any ideas of best practises about how to handle the lifecycle of Xray issues would be highly appreciated.

the assignee of an issue represents the person being currently responsible for it.
As you said, that might be clearer for Test Executions.
However, if you think your testing specification (writing Tests) and organization (Test Sets), and your planning (Test Plan), should be made by someone, possibly get reviewed by someone else (imagine the case where you have an workflow such as this) than you surely see the usage needs for an assignee.
Does it make sense for you?
