How can I assign different teams for components (with their own versions) of a big project?

If a project consists of a set of independent but connected software, how can I assign different teams, with different team leaders for each component, and see the overall progress of the project on one diagram?

It all depends on how your structure the releases and components. Based of the structure you should be able to create filters which you can almost use on any dashboard / reports to generate the report you need.

We don't use Components, but I'm also interested in the answers you get. 

Currently, we use dashboards for this kind of situation. Each related software product has its own project, board, and roadmap, then I use a JQL filter to round them all up and populate my dashboard widgets with the aggregate data.
