How can I view assigned cards to me but only on a specific board, and not on the entire organisation? When I select cards from the right top menu assigned to me, I only get cards assigned to me from all the boards. But this view is really narrow and not easy to work with. I would like to know if there is an option that I can see cards assigned to me on only one specific board?

The easiest way to configure this is by using the exact query the board in question uses and adding AND assignee = currentUser() at the end.
You get the filter query from the boards configuration here:
or contact the boards owner/ admin, if you can't access the boards configuration.
