Is there a way to uncheck / check all in a list?? Without creating templates/copying cards

Definitely would be a useful feature!
At present, unchecking / checking all in a checklist is not available in Trello. There is an open feature request for this, and I've gone ahead and added this thread to the request. While there is no ETA, I'll pass your interest in this onto our team for consideration! :)

You can also leave a comment to share your feedback and use case which also helps.
