My team cannot edit the Jira plan I created for us to plan our work

I created a Jira plan, and made sure my team has edit and view access to it as Advanced Roadmaps Users. The filter I used to pull in the issues in the plan is shared with the same user group.

They can see the plan, if they use the shared link (not the direct link), but they can't do any edits (like updating start/end dates, or adding dependencies).

What am I doing wrong?

Can these people edit the issues in native Jira? Can they do the linking or change dates on the Jira issues themselves?

If you have access, have you checked how the Advanced Roadmaps permissions are set and any influence that may be having on them?

Yes, they can click the links to go to each epic/story individually. I read the documentation on the permissions, and it seems to me that the users should have access to edit the plan.

What is even more interesting, is that when they use the direct URL (instead of the shared URL) for the plan, they can edit SOME of the issues to add due dates, start dates, etc. But some of them are greyed out and inactive (even when they are the assignee). It's unclear what the logic is behind which issues are greyed out in Jira Plans.

Greyed out means that those issues do not meet the current filter criteria but the plan is configured to "Show full hierarchy". Untick that, and the greyed out stuff will not show.
