Why was free Atlassian SNIPE-IT jira integration (snipeit-jira-integration) removed?

Because there was no good reason to maintain it and/or upgrading it for newer Jira systems was going to be too much work

150 installs in 3 months since release is a pretty good reason to keep developing.

Instead, Atlassian is raising prices on Cloud products and passing good integration apps to the likes of codefortynine who is charging $0.75 / per user / month for same app.  "Great" way to keep customers happy.

... and now the free plugin seems to have stopped syncing assets to our Snip-IT instance.

I'm really sorry for the disruption caused due to removing the beta version of the SnipeIT app. It was a tough decision for us but unfortunately we were unable to provide a satisfactory level of ongoing support and adding new capabilities.
