Is it possible to add additional content to the native "Page information" page within Confluence?

For example, if I would like to have a new field in there and manually assign a "Document owner" that then can be reported on. This person can/would be someone other than the page "Author".
You'd have to be a developer in order to pull that off.
What you're asking for is not natively available.
Depending on what you want to use it for, you could possibly use a Page Properties macro instead and have it hidden (or not).
That wouldn't involve any development, but it'd make the value, like Document owner, somewhat queryable in Confluence using the Page Properties Report macro.
You could setup a template that already has the macro and table with fields you want to capture. Then use the Create from template macro.
If you go this route, don't forget to add a label to each page.
It's a round about way of doing things, but requires no coding skills.
As a complementary explanation @Daniel Engzell, the Page Information page displays metadata resulting from what happened on the page. Therefore, it cannot be edited directly.
Furthermore, I would like to emphasize the aspect that @WW has mentioned: It probably makes a lot of sense to list the page owners on an overview page and this will likely be difficult to realize even if it should be possible to edit the Page Information page.

The Better Content Archiving app has dedicated support for page owners.
It allows choosing one or more owners for each page. It also allows one or more owners for a page tree by choosing them as "page owners" of the root of tree:
