Totally, totally brand new to confluence and I see this thing and it worries me...
What exactly is meant by "...anyone who is logged in..."? As in, any of the thousands of confluence users can edit and see my stuff?

Welcome to the community and welcome to confluence!
First of all, no worries. Your free confluence instance isn't accessible for everyone. Only you have access to it! In the free plan, you can grant access to up to 10 persons.
Your confluence instance has it's own users and login. You can set up the users in the confluence settings under "Users"
This will redirect you to the admin site, where you can set up users.
