We have confluence cloud and were told there was an approval system for documentation. For example, I assign John Smith to look at the document, make sure it's correct, then approve it. Thus making it a confirmed document.

Yeah, you will have to use an add-on. Comala Workflow is another great name in the marketplace, I believe it's now much easier to implement.
Apparently the app is now called Document Management. It's a good change, more specific to what it solves.

There is no built in approval system in Confluence Cloud. However there are a couple of add-ons in the marketplace which make this possible.
For example, we make Document Control for Confluence Cloud , which allows you to designate reviewers and different types of signatures for approval. There's a free trial.
After approval, you keep a record of when which document version was approved.
