Is it possible to hide Jira in Confluence?
Background:
Our employees are using Jira, but it's forbidden for external users.
We get several mails per day with "I want Jira..."
It would better, they don't know about Jira.

Are you referring that they are using application switcher and from there they request access to Jira?
If you'd want to restrict which users (e.g. internal/external) can request access to products, I would recommend checking out the following official support documentation: Control how users get access to products
Depending on what's considered an 'external user' within the site you're using, you could set that only users within your internal domain can request access to Jira (if they already don't have it), while everyone else cannot).
At the moment, it's not possible to 'customize' what's displayed within the app switcher.
