Hello Jessica, we do have our own docs exported in PDF here under the item "Latest versions of downloadable documentation". You can accomplish similar results by going to Tools > Export to PDF, full documentation about that can be found after this link.

That is correct, I believe that if you use the Scroll PDF Exporter add on you can agregate content using content labels.

Jessica, I don't fully understand what you're looking for. But if you're looking to combine some existing pages together into one page you could use the include page macro or the excerpt include macro to embed the entire content of one page (or just an excerpt of that page) into another.
