Could someone clarify what happened to the tagging functionality? Previously, I could add tags directly to pages with a single step. Now, the process requires multiple actions: clicking on the tags, waiting for the sidebar to open, clicking the “+” to add a tag, and then selecting the tag field to finally add it to a page.
This adds at least three extra steps and extra wait time. I’m curious why this change was made—what was wrong with the simpler, faster previous method?
In my view, this change doesn’t improve the process; it makes it more complicated and frustrating. My team also needs to be able to add and modify tags easily. With the new process, tagging becomes more cumbersome and may be done less frequently since it’s now less visible.

Thanks @marco for sharing the quick video for demonstration. As @Benjamin had mentioned below, we both see the other version as I had shared the screenshot.
But it looks like, yours is Confluence cloud version hence you have this process to add labels to a page.
I am not sure if there is any other way in cloud version to change the adding label to a page process.

To answer your question, labels/tags are still available in Confluence pages.
Click on the +Add label to choose new label from suggested list or you can type to add new label

Thanks for sharing the screenshot. Look like your site is somewhat different than what I have for behavior. I do not get a pop up. I still can add labels without pop up. Very much like the screenshot @Anwesha Pan (TCS) shared.
I'm on continuous release track so I get releases as they are ready. It could very well be a possibility you do have the latest behavior. I'll continue checking and seeing if anything changes. Even on my page, I have a comment boxes in the bottom and not a button.
