Maybe I remember wrong but when I used confluence in the past which were on prem instanced, the emails contained a very nice overview of what changed.
With the cloud version, that information is not there and you have to open the page and compare versions.
When trying to find a setting that probably would help, at best I've found this page https://support.atlassian.com/confluence-cloud/docs/subscribe-to-email-notifications/ but it's not a solution.
Is it possible with the cloud? And if yes, then how?
So, we contacted Atlassian support and they mention:
There is a slight change to how we handle mail notification on page edits.We have introduced "Daily Digest" where users will receive a single daily email with an overview of updates and activity in the pages and spaces they are watching.
Can you confirm if you receive this single email update on page modifications you are watching?
If yes, for immediate page change notification, you will have to disable this option from email settings from your profile -
In essence, if the Daily Digest is enabled, then you won't get the per-page detailed changes with the red/green color-coding.
There is no such setting for confluence cloud unfortunately. Best thing to do is to follow this documentation you found. If you subscribe to a space, or edit/comment/watch a specific page, then you will receive such notifications:

While processing this better inside my head, I think I never get the emails that contain the page changes. Instead, I only receive daily and weekly digests. Based on my settings, I should receive them though.

I think we don't receive the email when a page is edited. We get the notification but not the email with the color-coded deltas.
I checked this with a colleague who engages the same space. We both watch the page and we both did changes to that page and thought we got the notification, we never received the email. We both have the same settings as above.

Do you know why sometimes the notifications come without details and only with the message "[name] edited this page"?
I follow the page and have full permissions on it.
