We have some problem with some characters not showing correctly in pdf export. We would like to test others fonts like it's suggested but before we proceed, i want to be sure that it is possible to restore the default font, Helvetica, if we need to.

Hi Dominic, as @Monique Khairuliana[ServiceRocket] mentioned it is possible to restore the default font from the PDF Export Language Support.
For further control over how your PDF's are output, had you considered using an app from the Marketplace? We (K15t) develop Scroll PDF Exporter which allows you to format customized export templates that can be applied to your exported Confluence content. Within the templates you can add custom fonts that can be applied to your specific styles such as heading levels, list styles and the paragraph text. Yes you can Restore default anytime in the PDF Export Language Support itself by clicking the "Restore Default" link.
