Using Confluence Cloud. I created a "Welcome" page and set it as the default site homepage several weeks ago. All was fine.
Now twice today, I noticed that the Welcome page was no longer the default site homepage, and no longer appeared on the main navigation bar.
I went back into the "Further Configuration" settings and changed the site homepage back to my Welcome page from the dashboard.
Any idea what could be causing this?

Nic has correctly mentioned what could have caused this. It might be possible that this event is not captured in Audit log, but worth checking it. So please view your Audit log, filter it to see what actions have been performed in your space and by whom.

Only humans (with admin rights) can change that setting. Although it is very easy to accidentally reset while you're in that screen.
You'll need to talk to your other admins and ask them not to mess with it (or at least check the setting before they confirm any changes in there)
