Hi all,
I am just looking at the task email function sent via cloud (the notification email a user is sent when they have been set a task) - is there a way for the user to reply to the email + change the date set and be able to list the reason as to why the task completion date has changed? And then for this information to be relayed into the task?

I'm afraid that Confluence does not have an inbound mail system that could be used to read and process messages sent to it; it's an Outbound-only system.
I don't have one specific to Tasks, but there's a Feature Request to bring in an inbound system to Confluence so that it can create content from Email: https://jira.atlassian.com/browse/CONFSERVER-1726
If you're using Confluence Server, there is a 3rd Party App that can add some inbound functionality: Send EMail to Page Plugin
If you'd like, I could make one specific to Tasks on your behalf.
