I see that I can filter a task lit by task start/create date, but what I want is to be able to see the start date for a task, and sort a task list by start date, and track how long tasks hang around. Due dates are not good enough, as they can and should be updated as we go. Possible? Coming soon? Never gonna happen? Etc.

that's an interesting request. Currently such functionality does not exists and I couldn't find any other people than you requesting it. Based on that the chances that this will happen are very low. Atlassian roadmap is typically driven by highly requested items - hundred of votes.

Well, since freshness is such a commonly needed component of real task systems, I was wondering if maybe it's been discussed under a different name.
I agree with you though, I don't hold my breath waiting for bug fixes, let alone features, from Atlassian unless they are either egreguious or overwhelmingly requested.

That's the effect of having 50 000 users - you can't make everyone happy.
If your system have and use a lot of tasks I would do these in JIRA - it is the tool mean for real tracking.
