I created a new space with User X having edit permission but no edit rights in the space restrictions.
If I create a new page, by default the user will have edit permission, so apparently the pages do not inherit the space restrictions. Is this normal behavior?
I recommend reading this:
How to Best Use Permissions and Restrictions in Confluence
in addition to this basic page: https://support.atlassian.com/confluence-cloud/docs/what-are-confluence-cloud-permissions-and-restrictions/
Thanks, I think I understand, But it seems a bit strange that when you define restrictions on Space level this is not proposed by default for all pages.
In fact, if I think about it. If I define the permissions, I don't need to add restrictions unless I want to restrict some pages. Correct?

Yes.
For example, on my site, there are space for documentation and space for intranet.
I don't want intranet folks to mess up with documentation, so I created a special user group for intranet contributors - that group does not have access to documentation spaces.
