Hey,
Just started using Confluence and using asterisks around some text makes it italic, and the header markup features do absolutely nothing if using.
h1. Example
or *bold*
_italics_, for example, does work.
-Lists also seem to work.
Am I missing something? Driving me mad!

You're likely using the new editor, which has a new set of keyboard shortcuts.
To view these, in the edit page there is a "?" button in the lower-left corner. Press this and select "Editing Keyboard Shortcuts"
This will show you the new options, such as **Bold** for bold.
You can also open the keyboard shortcuts using Cmnd + / on a Mac - your keyboard shortcuts will show the option based on your OS type - so will have a different option for Windows.

I would say so - if you look at this page for example, there's already details around auto-complete in the new editor :)
There are a lot of articles, blogs, etc which cover these topics - you can check at the bottom of a page when it was last modified to see how up to date it is :). For example the page I linked above was last updated on 03/01/2020.

Is it possible to create a table with just mark up?
I can't get this to work.

Not that I've seen in Confluence; what's the need to use mark-up as opposed to just adding a table to the page?

The reason is we have a application that exports MD data. It would be awesome to just copy and paste that MD table on the Confluence page. It's a big data set, it would be quicker just to replace the table and not update individual cells with new information.

I don't believe this is possible in the new editor; see this comment on another similar question.
There is a suggestion to add full markdown support to the new editor, vote/follow CONFCLOUD-68137
