How to Hide field from customer portal,but it should be be visible in view screen in the customer portal

There is no natively possible. On the customer portal, you see all fields which are added to the request form. If they're added only to issue view (available from Jira), their values are not visible.
You can present values from fields which are not on the Request form but on the issue view with our app Feature Bundle for Jira Service Management. We support all system and custom fields, even Assets added to the issue.

No as the portal doesn't use screens. It has a request type where you specify inputs to be made. This detail can be seen from the portal.
There are 3rd party apps on the marketplace that are able to provide more detail on the customer portal.
