I was wondering if there is a reason that issues on my board, once they have been transferred to an approval column, disappear.
Is this a setting I can turn off?

Can you confirm that this is a Jira Work Management/Business project with with you are working? I ask because you posted your question in the Jira Service Management Questions forum, and JSM is a different project type.
What status is mapped to the Approval column? Is the color of the status green?
Do the issues disappear immediately or after some time has passed?
Are you still able to see the issues in the List view?
In a JWM board, issues moved to a green-colored status will be automatically hidden from the board when they have been in that status for 2 weeks or longer. This is hard coded and not configurable. This is a feature in JWM based on the assumption that if the issue has been "done" for 2 weeks or longer it no longer needs to be displayed on the board.
There is a change request about making that configurable, to which you can add your vote:
