Can I create a rule so that when a customer enters a due date in a form, they can only select a date that is 30 days after from the current date?

Usually, if you want to do some action / validation in the create screen, or in this case, within the request form, before it is submitted, you would need to use a behaviour for this, in Scriptrunner -https://docs.adaptavist.com/sr4jc/latest/features/behaviours
I did check as well, if you use a JSM form, instead of the Request Form, there does seem to be this possibility here
To specify for a date field, the earliest / latest date, but I am not sure about what, if any, syntax you could put in here to say, the earliest date (in this case, for an event) would be in 1 month or 6 months or whatever, to specify the lead time required for planning.
Please try out the forms and / or Behaviours and see if you can get what you need.
