In JSM when people work out of their various projects and they click customers everyone can see every customer.
What I want to do is limit customers to only certain projects.
I was looking at this link
but I can't find the option to be able to set a customer to have a particular project role for a project name (step 3).
Can someone let me know where I should be going to find this setting so I can test out the changes?

As you provided the link, you will need to access "Project settings" >> "People" UI to manually add the customer to your specific project. Example - add the user by assigning he/she with the Service Desk Customers project role.
You will need to also complete the rest of the steps mentioned in the article (your link) to lock-down the project. This entire setup must be done project by project basis for all of the projects that you want to locked down.

Not from the Project.
If you go into Jira Admin, you can export a list of all "Portal-Only Customers", but that doesn't include what Project they are accessing.
1. Go to Products, and then site
2. Go to Portal-only customers
3. Select Export Customers
