Hi Jimmy:
It is by design that the project key cannot just be 1 character long. The default max key length is set to 10 characters long.
Based on my experience and knowledge that typically the key should be set to 3 characters (minimum).

Same as Joseph said, it's minium of 2 characters. That's because project keys must start with an uppercase letter, followed by ONE OR MORE uppercase alphanumeric characters.
Generally, you can find answers to that sort of frequently asked question much faster using Google. For example, if you Google 'jira minimum project key length' you'll see the very first result is the answer.

Oh for goodness sake! There is no 'other way' with Jira Cloud. That link you've given is for documentation for Jira SERVER / DATA CENTER not Jira CLOUD.
Even in those platforms, you could not have one, single letter as the project key, you needed at least ONE OR MORE alphanumerics or an underscore following that letter. The closest you can get on those platforms would be "X_", which is described in the documentation, if you read it fully.
Also, using single letters as project keys is not a smart thing to do, since you can only have 24 projects running concurrently before you run out of letters in the English alphabet and have project key collisions.... something that a Software Development Engineer would immediately realise was not good.
Read the prior threads like this one where this whole topic has previously been discussed, which will lead you to JRACLOUD-42174 where Atlassian have stated, quite categorically, that the project key format for the cloud based products will stay fixed and not changeable like it is on the server / DC products.
