I try to add the field "request participant" to a Request Type form in the Help Center Portal.
When I click on "+ Add a field " button in the "Request types" setting page the field "Request Participant" is not an option.

You can't add request participant field to customer portal.
JIRA Service Desk customer can still add Request Participant once the issue is created. To do that, user just need to create the request, click on "Share" then type the desired email address of the user that he wants to share the request.
or You can include request participants in an organization also
