Is it possible to retrieve the history of an issue's due date in order that the number of changes, and values can be exported for use in external reporting?
For example, if there are three issues being reported on, one has had no changes to the due date, one has had it changed once, one has had four changes. Can I export all the due dates ever assigned to these issues?

If you use Power BI, Power BI Connector for Jira can help you get the data you need.
How it works:
1. Install the app (it is available for a trial to explore whether the app works for you or not)
2. Create a data source by selecting the Histories table filtered by Due date:
3. Export the data in Power BI: you can track the date of changes and old/new values for the due date

Have nothing in mind from the built-in options. If you are ok with plugins, I would like to suggest Issue History for Jira from my team. Here, you can add the due date field as a column and get all changes for the list of issues. You can filter issues by project, sprint, dates, etc. Export to SCV, Excel is also available.
You can also choose only specific issues if you know their issue keys.
