Is there a way to hide fields for front facing customers but have it available to administrators.
Users in my service unit want the ability to select their own custom "Due Date" during the Creation of a Request, but we don't want end users clients to tell us what 'Due Date' they want when they submit requests from thier portal

Yes, you can add the "Due Date" field to the "Screens" so it's available to backoffice users. And if you don't include it on the "Request form" of the portal, it will be hidden from the end users.

Can you expand on the procedure? I'm looking at the "Screens" under 'Project Settings' and don't see anything you can select to modify the Due Date or any other field on any screen.

To control which fields are displayed on the screen in the Jira backoffice, you will have to look at the "screen schemes" and "screens" configuration of your project.
A "Screen Scheme" is assigned to your project and defines which screens are used for which issue type. And each issue type can have 3 screens (Create, Edit, View).
On the "Screen" you define which fields are available (Your "Due Date" fields should be added on the correct screens). Have a look at this documentation about Screen Schemes and Screens .
