×We have changed the Request module and added two fields (as per screenshot "Component/s" and "Priority").
How can we propagate this change to all previous open and unresolved requests / issues?

There is a much simpler way to do this, I do not know if you are familiar with Bulk Change? In the Jira issue navigator you can select a lot of issues a modify fields in bulk for them.
You just have to do your search and in the top right you will have the Bulk Change option to modify this fields at the same time.
You can edit, transition, move and even delete a lot of issues at the same time! Regards.

Do you mean that you want to fill these new fields for old issues? If so, you can use Jira Cloud Rest Api to set values for this fields:
