My messages are coming in all squished up with a bunch of space out to the right. Any info on how I can make this fill in properly would be greatly appreciated. Thanks!

Just for a better understanding of the issue, I would like to confirm if this is related to agent or customer notification.
Testing on my local site, I wasn't able to replicate the issue because none of the notifications shows like the one from the screenshot you shared. Actually, the screenshot seems like it's the ticket itself and not a notification.
Would it be possible to share with us a screenshot of the entire message?
Since you are a site administrator, you should receive a notification like the one below:
Please, let us know the steps you are following so we can test here to check what is causing the issue.

I'm on the Agent perspective here. Yes, I'm in the actual Service Desk looking at the ticket. Something is formatting the message like this, and I have no idea what.
I need to see if I can find the matching email notice to see if it does the same thing or if it's only happening in the actual service desk. I'll get back on that soon...

Okay, by reviewing that extra detail you asked for (which I should have done in the first place) I found the problem.
The tickets where this is happening are being forwarded from a form on our website instead of using the Service Desk request form. I can probably make an adjustment on that side to fix it, or just ditch that form altogether and send people directly to Service Desk instead.
The submissions done using the Service Desk forms are coming in as expected. Sorry to waste your time!
