Please note that I was not able to find a roadmap for Insight for Jira Cloud. I was able to find below Roadmap information from https://www.atlassian.com/roadmap/cloud?category=jiraServiceNewFeaturesImprovements&
In regards to your other query related to Support for Next-Gen Projects and support for more than two post-functions. I was able to find a similar feature request raised with our Development team.
- Ability to use the Insight object custom field with next-gen projects
- Support additional attribute type for Insight post function
I will follow up with the Insights team and update you back if we have any feedback from them.
