Can anyone please confirm if it is possible to change the workflow through automation without altering the issue type and request type? Specifically, I have a custom field called "Tier," and I need the workflow to change based on the selected option in the "Tier" dropdown. For example, if "Tier 1" is selected, the workflow should switch to the Adops Workflow, and if "Tier 2" is selected, it should switch to the Finops Workflow(Workflow name). Any guidance on achieving this would be appreciated.
You cannot switch to another physical workflow in Jira. One issue type will always have one workflow linked to it.
However, you could adjust your single workflow to combine both flows into one, using 'conditions' in your transitions to work if a certain field is a certain value. This can become quite complex, but I've seen it work before.

I'll show it in a few screenshots below.
1. In the workflow, select the transition and click on 'Conditions'
2. In the screen that opens, click the 'Add condition' button
3. Then, choose 'Value Field' and hit 'Add'
4. Then, choose the custom field that you want to use, to make sure that only if this value is filled, people can choose this transition, then hit 'Add.
5. Save the workflow, apply it to the project in question and test it out! It usually takes a second or 3 to see the new statuses show up in the Status dropdown.

No, this is just one workflow in which I have added two statuses, with each their own Transition (in this example called 'Transition to 1' and 'Transition to 2'.
The beauty of transitions is that you can add conditions and validators to it, making sure it's only executable in certain situations (like the one you're looking for).
