With Issue History, you get the history of all the issues' changelog and the ability to monitor updates made by each user.
Additionally, you can try Time in Status for Jira Cloud. This tool shows the lasting of issue in each status. That's an essential part of measuring any workflow's effectiveness. Both of these tools provide the ability to export the data as XLSX or CSV files.
