Is it possible to set the Component field when composing an email that will be sent to Jira Service Desk?
I have a dashboard that shows issues with that particular component.
I would like issues created through email to be shown in that dashboard.

I don´t want this for all issues. Only certain ones. These issues are sent to a company outside our organization and we have to keep track of these issues using this particular component.
I was thinking, when composing the email, would it be possible to add the component to the issue using a certain string or similar in the email?

Per your description, I understand that you would like to set a single component when an issue is created through E-mail in your Jira site. Is that correct?
You can do it by using Automation rules. These would be the steps:
The rule above will automatically add the component you need to all issues created through e-mail.
