We have recently embarked on an increase of AI use across our company, and we have encouraged the use of Atlassian AI.
is there any capability for us to track adoption rates? i.e. how many users are making use of the feature?

It's not possible to track usage of Atlassian Intelligence at the moment, but this feature is being worked on as stated on this page :D
We do not currently offer a way for you to track Atlassian Intelligence usage, but we are working on a dashboard in Atlassian Admin that will show your usage. We will let you know as soon as this is available.
